Coffee is one of the most widely consumed beverages in the world. The genetic variability of Coffea canephora has demonstrated significant differences in the chemical compositions of genotypes, resulting in different sensory profiles in the beverage. Fermentation can also affect the sensory quality of coffee beverage. Therefore, the objective of this study was to analyze the sensory profile and the chemical groups that contribute to the sensory qualities of the coffee beverage of C. canephora var. Conilon genotypes subjected to different fermentation processes. Fermentations were carried out with 4 L of cherry coffee or peeled cherry coffee for 36 h at 25 ?. In the induced fermentation, the initial Colony Forming Unit (CFU/mL) was of 107 for Saccharomyces cerevisiae, Klebsiella sp, and Lactobacillus brevis. There was no microbial inoculation in the washed fermentation and the natural process. The sensory quality and chemical groups of the coffee were determined using the Uganda Coffee Development Authority Sensory Analysis Protocol with 6 Q-Graders and mid-infrared spectroscopy, respectively. The sensory and spectrometry analyses were able to distinguish the genotypes, highlighting the separations of genotypes A1 and Verdim with the worst sensory results, and genotype 153 with the best result. Groups formation through the mean Euclidean distance reinforces the sensory differences between fermentations. Furthermore, the greatest chemical changes in coffee beans were promoted by fermentation induced by S. cerevisiae. Thus, the genotypes and the type of fermentation influence in the sensory quality demonstrating potential for optimizing fermentations to improve the sensory quality of conilon coffee. A região nordeste do Estado, formada por extensas áreas planas, aptas a mecanização da cultura e da colheita, apresenta temperaturas médias anuais acima daquelas ótimas para o cultivo do café arábica. Este trabalho visa estudar o desempenho de cultivares de Coffea arabica na região baixa e quente do Estado do Espírito Santo, visando selecionar os de maior adaptação às altas temperaturas e oferecer mais uma opção de cultivo nas regiões de menor altitude e com potencial para mecanização. O estudo contempla a avaliação de sete cultivares por quatro safras após a recepa, conduzidas com irrigação do tipo gotejamento, em dois sistemas (S), sombreado com bananeira e a pleno sol, na Fazenda Experimental de Sooretama, região nordeste do Espírito Santo. Verificou-se que a seca dos anos de 2015 e 2016 na região norte do Espírito Santo, associada às temperaturas elevadas interferiram negativamente no crescimento das plantas, frutificação e granação. Não houve diferenças significativas entre os Sistemas Sombreados com Bananeira e Pleno Sol. Dados conjuntos mostraram produtividade média das cultivares muito baixa (16,55 sc/ha) quando comparada ao potencial da espécie em altitude superior a 600 m, como também comparada a de Conilon nas mesmas condições de cultivo. A cultivar Obatã IAC1669-20 apresentou maior potencial de adaptação em relação às demais cultivares avaliadas.
The northeastern region of the State, formed by large flat areas, suitable for mechanization of the crop and harvest, has average annual temperatures above those optimum for the cultivation of arabic coffee. This work aims to study the performance of Coffea arabica cultivars in the low and hot region of Espírito Santo State, aiming to select the ones with the highest adaptation to high temperatures and to offer one more option for cultivation in the lower altitude regions with potential for mechanization. The study includes the evaluation of seven cultivars for four harvests after cutting, conducted with drip irrigation, in two systems (S), shaded with banana and full sun, at Sooretama Experimental Farm, northeast region of Espírito Santo. The drought of 2015 and 2016 in the northeastern region of Espírito Santo, associated with high temperatures, had a negative effect on plant growth, fruiting and granation. There were no significant differences between banana and full sun shade systems. Pooled data showed very low average yield of cultivars (16.55 sc/ha) when compared to the potential of the species at an altitude above 600 m, as compared to Conilon under the same cultivation conditions. The cultivar Obatã IAC1669-20 presented higher adaptation potential in relation to the other evaluated cultivars.
